Effect of Sun Drying on Osmotic Dehydration of Beetroot (Beta vulgaris L.)

An Experiment was conducted at the Postharvest laboratory, Department of Horticulture entitled with “Effect osmotic dehydration beetroot (Beta vulgaris L.) under sun drying” during year 2021-2022 to determine effect drying on slices for its evaluation physio-chemical contents, shelf life, and sensory total 60 days storage period work out economics In this study, 10 treatments varying amounts salt, honey, sugar, K2S2O5 were used, 4 replications (10 days, 30 45 days) periods ambient temperature. On basis results obtained investigation best agent slice T7 Treated (Sugar 200g/Kg + 0.5%) Sun slices) pH (6.30), TSS (11.46), fat content (0.28), Protein (2.41), weight (92.5g). (Treated found have highest value reducing sugar content, Flavour Taste score, overall acceptability. Treatment also had benefit-cost ratio (1.94).
